Healthy Fattah

Serving for 5 persons

2 zucchini grilled and diced

1 potatoes grilled and diced

2 eggplant grilled and diced

1 cup of cauliflower grilled

1 piece of Arabic bread, toasted

½ cup of chickpeas 



1 tablespoon olive oil

2 tablespoon lemon juice

2 cup of low fat yogurt

½ clove of crunched garlic

Pinch of salt

Pinch of cumin


To decorate

½ cup of parsley, finely chopped

15 pieces of pine nut  



In a bowl mix the yogurt, lemon juice, salt, cumin and garlic then adjust acidity and thickness; at that time simmer the mixture without boiling. 

Keep all grilled vegetables in a bowl then add the sauce on top then decorate with toasted bread, parsley and pine nuts at that time served hot.
