Healthy Risotto - for 4 persons

Ingredients
• 1 medium sized onion
• 1 tablespoon olive oil
• 2 pieces of chicken breast (cut into cubes)
• 2 cup of Arborio rice special for Risotto (cooked)
• 2 teaspoon spices (paprika, black pepper, salt)
• 1 tablespoon of Cajun spices
• ¼ cup of ground coriander
• 1 tablespoon of vinegar
• 2 cup of low fat milk
• 3 tablespoon tomato paste

 

Preparation
1. Heat spoon of olive oil with the tomato paste and stir for 5 minutes with adding spices and milk on the end.
2. In another pan add the onion with little olive oil chicken breast, spices, vinegar, coriander and simmer until the chicken will be cooked.
3. Add the cooked Risotto rice to the sauce with stirring until it become thick.
4. Serve Risotto hot and decorate with chicken pieces.

 

Nutrition Message
Risotto is one of the heavy famous Italian dishes, which contains high amount of fats. We can make it healthier by replacing the high calorie fats with one spoon of olive oil and low fat milk. The wholegrain Italian rice is a high source of fiber which helps in digestion and keeps you feel full for longer time.
